Celebrity Chef Alan Coxon shares one of his favourite Winter-warmer recipes with us.
Served piping hot and full of spice and flavour these apples are gorgeous after a long walk with the dogs or after a hard day at work.
INGREDIENTS:
4 small cooking apples
25g butter
50g sultanas (roughly chopped)
50g mixed dried peel (roughly chopped)
50g hazelnuts (roughly chopped)
80g dark brown sugar (muscavado)
2tbsp clear honey
1/2tsp ground nutmeg
150ml cider
2tbsp brandy
METHOD:
Preheat the oven to 180C, gas mark 4.
Remove the cores of the apples.
Using the point of a small knife, insert into the skin, approx 3 quarters up (piercing the skin only)…and keep aside.
In a bowl, mix together butter, dried fruits, nuts, cider, brandy and sugar and stuff each apple with the mixture until full and tight.
Place the apples in an ovenproof dish and drizzle over the honey and dust with nutmeg. Pop into the oven for around 25 minutes.
