Harvey Nichols Birmingham makes vegetables the star of the show this January with the launch of its new vegan dishes and meat-free afternoon tea.
Whether you’re a committed carnivore or have already signed up to a plant-based diet, the delicious selection is packed with green goodness – perfect after all that festive over-indulging.
To encourage diners to experiment with new flavours or enjoy Veganuary in style, Head Chef Stewart Mackie and his team have created a range of mains using seasonal ingredients, including butternut squash superfood salad with grilled courgette, quinoa, baby spinach, avocado, edamame beans, pomegranate and lemon dressing; and sous vide aubergine with red pepper tagine, sweet potato and apricot.
The vegan afternoon tea features golden beetroot, aged balsamic and rosemary salt on granary bread; roast tofu sandwiches with sage, cranberry and onion stuffing; wild mushrooms on toast; and chestnut and mushroom roll. Sweet treats include lemon meringue pie; apple mousse; and coconut and pineapple cake. Priced at £22 to included unlimited tea or coffee, a Champagne afternoon tea is also available for £32.
